on creamy mash with a delicious redcurrant and mint gravy

with a light Vermouth and watercress sauce

Duck Confit
Duck leg slowly braised with aromatic herbs and marinated
for 36 hours whilst the flavours infuse - then, oven roasted
and served with an orange and cranberry sauce
